Instructions
1. Cook the brown rice according to package instructions. Let it cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
3. Add the cooled brown rice to the bowl and mix well.
4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
5. Pour the dressing over the salad and toss to combine.
6. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
