Ingredients

  • 1 cup Brown Rice uncooked
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red Onion finely chopped
  • ¼ cup Kalamata Olives pitted and sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook the brown rice according to package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. 3. Add the cooled brown rice to the bowl and mix well.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
