Ingredients 

Matzo Balls

  • 1 cup matzo meal
  • 4 eggs beaten
  • ¼ cup chicken fat melted
  • ¼ cup water
  • 1 teaspoon salt

Soup

  • 8 cups chicken broth
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 onion diced
  • to taste salt and pepper

Instructions 

  1. In a mixing bowl, combine matzo meal, beaten eggs, chicken fat, water, and salt. Mix well and refrigerate for 30 minutes.
  2. Bring a large pot of salted water to a boil. Wet your hands and form the matzo mixture into balls. Drop them into the boiling water, reduce heat, and simmer for 30 minutes.
  3. In another pot, bring chicken broth to a boil. Add carrots, celery, and onion. Cook until vegetables are tender, about 20 minutes.
  4. Transfer cooked matzo balls to the soup. Season with salt and pepper to taste. Serve hot.
