Ingredients 

Main Ingredients

  • 2 cups lobster meat cooked and chopped
  • 1 cup heavy cream
  • 1 cup fish stock
  • 1 cup white wine
  • 1 tablespoon tomato paste
  • 1 tablespoon butter
  • 1 small onion chopped
  • 1 stalk celery chopped
  • 1 clove garlic minced
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Cook until softened.
  2. 2. Stir in the tomato paste and cook for another minute.
  3. 3. Add the white wine and fish stock. Bring to a simmer and cook for 10 minutes.
  4. 4. Add the lobster meat and cook for another 5 minutes.
  5. 5. Use a blender to puree the soup until smooth. Strain the soup back into the pot.
  6. 6. Stir in the heavy cream and season with salt and pepper. Heat through but do not boil.
  7. 7. Serve hot, garnished with a sprinkle of fresh herbs if desired.
