1. Rinse the rice under cold water until the water runs clear.
2. In a saucepan, bring the water to a boil. Add the rice and salt, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
3. Remove the saucepan from heat. Let it sit, covered, for 5 minutes.
4. Fluff the rice with a fork. Stir in the olive oil, lime juice, and chopped cilantro.
