Ingredients

  • 2 cups Leftover chicken, shredded
  • 1 cup Mashed potatoes
  • ½ cup Breadcrumbs
  • 1 Egg beaten
  • ¼ cup Onion finely chopped
  • 1 tablespoon Parsley chopped
  • to taste Salt and pepper
  • as needed Oil for frying

Instructions 

  1. 1. In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, chopped onion, parsley, salt, and pepper.
  2. 2. Form the mixture into small patties.
  3. 3. Heat oil in a frying pan over medium heat.
  4. 4. Fry the patties until golden brown, about 3-4 minutes per side.
  5. 5. Drain on paper towels and serve hot.
