Leftover Chicken Croquettes Recipe
A great way to use up leftover chicken, these croquettes are crispy on the outside and tender on the inside.

- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 Egg beaten
- ¼ cup Onion finely chopped
- 1 tablespoon Parsley chopped
- to taste Salt and pepper
- as needed Oil for frying
1. In a mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, chopped onion, parsley, salt, and pepper.
2. Form the mixture into small patties.
3. Heat oil in a frying pan over medium heat.
4. Fry the patties until golden brown, about 3-4 minutes per side.
5. Drain on paper towels and serve hot.
