Kimchi Fried Rice

Ingredients 

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 cup kimchi chopped
  • 2 tablespoons kimchi juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons vegetable oil
  • 2 units eggs beaten
  • 2 units green onions chopped
  • 1 teaspoon sesame seeds for garnish

Instructions 

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the beaten eggs and scramble until just set. Remove and set aside.
  3. Add the kimchi and stir-fry for 2-3 minutes.
  4. Add the cooked rice, kimchi juice, soy sauce, and sesame oil. Stir-fry for another 5-7 minutes.
  5. Return the scrambled eggs to the pan and mix well.
  6. Garnish with chopped green onions and sesame seeds before serving.
