  • 4 Eggs
  • 2 tablespoon Sugar
  • 1 tablespoon Mirin
  • 1 pinch Salt

Instructions 

  1. 1. Crack the eggs into a bowl and whisk them well.
  2. 2. Add sugar, mirin, and a pinch of salt to the eggs and mix well.
  3. 3. Heat a non-stick pan over medium heat and lightly oil it.
  4. 4. Pour a thin layer of the egg mixture into the pan and cook until it begins to set.
  5. 5. Roll the egg to one side of the pan and pour another thin layer of the egg mixture into the pan. Repeat until all the egg mixture is used.
  6. 6. Remove from the pan and let it cool slightly before slicing.
