Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • 1 cup Onion diced
  • 1 cup Bell Pepper diced
  • 1 cup Celery diced
  • 3 cloves Garlic minced
  • 1 can Diced Tomatoes with juice
  • 1 cup Chicken Broth
  • 1 cup Long Grain Rice
  • 1 teaspoon Cajun Seasoning
  • 1 lb Shrimp peeled and deveined
  • 2 tablespoon Parsley chopped
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chicken and sausage, cook until browned.
  2. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  3. Stir in diced tomatoes, chicken broth, rice, and Cajun seasoning. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
  5. Add shrimp, cook until pink and opaque, about 5 minutes.
  6. Stir in parsley, season with salt and pepper. Serve hot.
