Instant Pot Chicken and Dumplings

Main Ingredients
- 1 lb Chicken breast, diced
- 1 cup Carrots, sliced
- 1 cup Celery, sliced
- 1 cup Onion, diced
- 4 cups Chicken broth
- 1 cup Frozen peas
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Thyme
Dumplings
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- ½ cup Milk
- 2 tablespoon Butter, melted
1. Set Instant Pot to sauté mode. Add a bit of oil and cook chicken until browned.
2. Add carrots, celery, and onion. Sauté until softened.
3. Pour in chicken broth, add peas, salt, pepper, and thyme. Stir well.
4. In a mixing bowl, combine flour, baking powder, and salt. Stir in milk and melted butter until just combined.
5. Drop spoonfuls of dumpling batter on top of the chicken mixture.
6. Close the lid and set the Instant Pot to manual high pressure for 10 minutes. Quick release the pressure.
7. Serve hot and enjoy!
