Main Ingredients
- 500 g Chicken Breast cut into cubes
- 2 tablespoon Vegetable Oil
- 1 large Onion finely chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Curry Powder
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 400 ml Coconut Milk
- 1 can Tomatoes diced
- 1 cup Water
- to taste Salt
- to taste Black Pepper
- 1 bunch Cilantro chopped, for garnish
Heat oil in a large pot over medium heat.
Add onions and sauté until golden brown.
Add garlic and ginger, cook for another 2 minutes.
Add curry powder, turmeric, cumin, and coriander. Stir well.
Add chicken and cook until browned.
Pour in coconut milk, tomatoes, and water. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
Season with salt and pepper to taste.
Garnish with chopped cilantro before serving.
