Grilled Mediterranean Vegetable Sandwich Recipe
A delicious and healthy sandwich packed with grilled Mediterranean vegetables.

Main Ingredients
- 1 large Eggplant sliced
- 1 large Zucchini sliced
- 1 large Red Bell Pepper sliced
- 2 tablespoon Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 4 pieces Whole Grain Bread toasted
- ½ cup Hummus
Preheat the grill to medium-high heat.
Brush the eggplant, zucchini, and red bell pepper slices with olive oil.
Sprinkle with dried oregano, salt, and black pepper.
Grill the vegetables for about 5-7 minutes on each side, until tender and grill marks appear.
Toast the whole grain bread slices on the grill for about 1-2 minutes on each side.
Spread hummus on one side of each toasted bread slice.
Layer the grilled vegetables on top of the hummus on two of the bread slices.
Top with the remaining bread slices, hummus side down, to form sandwiches.
Cut the sandwiches in half and serve warm.
