  • 4 cups Mixed Greens washed and dried
  • 1 cup Cherry Tomatoes halved
  • 1 cucumber Cucumber sliced
  • 0.25 cup Red Onion thinly sliced
  • 0.25 cup Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. 2. In a small bowl, whisk together the olive oil and lemon juice. Season with salt and black pepper to taste.
  3. 3. Drizzle the dressing over the salad and toss gently to combine.
