Ingredients

  • 6 eggs hard-boiled and chopped
  • ½ cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon fresh dill chopped
  • ¼ cup red onion finely chopped
  • to taste salt and pepper
  • 8 slices whole grain bread toasted

Instructions 

  1. 1. In a mixing bowl, combine the chopped eggs, Greek yogurt, Dijon mustard, lemon juice, fresh dill, and red onion.
  2. 2. Season with salt and pepper to taste. Mix well until all ingredients are evenly combined.
  3. 3. Spoon the egg salad onto the toasted whole grain bread slices.
