- 2 lbs Potatoes peeled and cut into wedges
- ¼ cup Olive Oil
- ¼ cup Lemon Juice freshly squeezed
- 3 cloves Garlic minced
- 1 tablespoon Oregano dried
- 1 teaspoon Salt
- ½ teaspoon Black Pepper freshly ground
- 1 cup Chicken Broth
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
Add the potato wedges to the bowl and toss to coat them evenly with the mixture.
Transfer the coated potatoes to a baking dish and pour the chicken broth over them.
Roast in the preheated oven for about 50 minutes, or until the potatoes are golden brown and tender, stirring occasionally.
Remove from the oven and let them cool slightly before serving.
