Ingredients

  • 1 cup uncooked rice preferably long grain
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • ½ cup kalamata olives pitted and sliced
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. Cook the rice according to the package instructions. Let it cool.
  2. In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate for later.
