Greek Lemon Chicken Soup

- 1 lb Chicken breast boneless, skinless
- 6 cups Chicken broth
- ½ cup Rice uncooked
- 2 Eggs
- 2 Lemons juiced
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
1. In a large pot, bring the chicken broth to a boil.
2. Add the chicken breast and cook until fully cooked, about 20 minutes. Remove the chicken and shred it.
3. Add the rice to the broth and cook until tender, about 10 minutes.
4. In a bowl, whisk the eggs and lemon juice together.
5. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
6. Gradually add the egg mixture back into the pot, stirring constantly.
7. Add the shredded chicken back to the pot and season with salt and pepper.
8. Serve hot and enjoy!
