Ingredients 

Salad Ingredients

  • 2 cups Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • ½ cup Red Onion thinly sliced
  • ½ cup Kalamata Olives pitted
  • ½ cup Feta Cheese crumbled

Chicken Marinade

  • 2 pieces Chicken Breasts boneless, skinless
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. 1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. 2. Preheat grill pan over medium heat. Grill chicken for 6-7 minutes on each side or until fully cooked. Let it rest, then slice.
  3. 3. In a large mixing bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. 4. Top the salad with sliced grilled chicken. Serve immediately.
