Main Ingredients
- 2 cups cooked couscous
- 2 pieces chicken breasts cut into strips
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion thinly sliced
- ½ cup feta cheese crumbled
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- to taste salt and pepper
1. In a large skillet, heat olive oil over medium heat. Add chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Season with salt, pepper, and oregano.
2. In a mixing bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
3. Add cooked chicken to the couscous mixture. Drizzle with lemon juice and toss to combine.
4. Serve immediately or refrigerate for later. Enjoy!
