Ingredients 

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 6 cups Chicken broth
  • ½ cup Rice uncooked
  • 2 large Eggs beaten
  • 2 large Lemons juiced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, bring the chicken broth to a boil. Add the chicken pieces and cook until tender, about 20 minutes.
  2. 2. Remove the chicken from the pot and set aside to cool. Add the rice to the broth and cook until tender, about 10 minutes.
  3. 3. In a bowl, whisk together the eggs and lemon juice until frothy.
  4. 4. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
  5. 5. Gradually add the egg mixture back into the pot, stirring constantly. Do not let it boil.
  6. 6. Shred the chicken and return it to the pot. Season with salt and pepper to taste. Serve hot.
