- 2 medium zucchini sliced into rounds
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup vegetable oil for frying
1. Slice the zucchini into rounds.
2. In a mixing bowl, combine flour, salt, and pepper.
3. Beat the eggs in another bowl.
4. Mix breadcrumbs and grated Parmesan cheese in a third bowl.
5. Dredge zucchini slices in flour mixture, dip in beaten eggs, then coat with breadcrumb mixture.
6. Heat vegetable oil in a frying pan over medium heat.
7. Fry zucchini slices until golden brown, about 2-3 minutes per side.
8. Remove and drain on paper towels. Serve hot.
