  • 2 medium zucchini sliced into rounds
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable oil for frying

Instructions 

  1. 1. Slice the zucchini into rounds.
  2. 2. In a mixing bowl, combine flour, salt, and pepper.
  3. 3. Beat the eggs in another bowl.
  4. 4. Mix breadcrumbs and grated Parmesan cheese in a third bowl.
  5. 5. Dredge zucchini slices in flour mixture, dip in beaten eggs, then coat with breadcrumb mixture.
  6. 6. Heat vegetable oil in a frying pan over medium heat.
  7. 7. Fry zucchini slices until golden brown, about 2-3 minutes per side.
  8. 8. Remove and drain on paper towels. Serve hot.
