Instructions
Heat the oil in a wok or large skillet over medium-high heat.
Add the garlic and mixed vegetables, stir-fry for 3-4 minutes.
Push the vegetables to the side and pour the beaten eggs into the pan. Scramble the eggs until fully cooked.
Add the cooked rice and soy sauce. Stir-fry everything together for another 5 minutes.
Garnish with sliced green onions and serve hot.
