Ingredients

  • 2 medium eggplants sliced into rounds
  • 1 cup flour
  • 2 units eggs beaten
  • 1 cup breadcrumbs
  • 1 cup vegetable oil for frying

  • to taste black pepper

Instructions 

  1. 1. Slice the eggplants into rounds and season with salt. Let them sit for 10 minutes to draw out moisture.
  2. 2. Pat the eggplant slices dry with paper towels.
  3. 3. Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  4. 4. Dredge each eggplant slice in flour, then dip in beaten eggs, and coat with breadcrumbs.
  5. 5. Heat vegetable oil in a frying pan over medium heat.
  6. 6. Fry the eggplant slices until golden brown on both sides, about 2-3 minutes per side.
  7. 7. Remove from the pan and drain on paper towels. Season with salt and pepper to taste.
