  • 4 large flour tortillas
  • 6 eggs beaten
  • 1 cup shredded cheese
  • 1 cup cooked sausage crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions

Instructions 

  1. 1. Cook the sausage in a skillet over medium heat until browned. Remove and set aside.
  2. 2. In the same skillet, sauté the bell peppers and onions until soft. Remove and set aside.
  3. 3. Pour the beaten eggs into the skillet and scramble until fully cooked.
  4. 4. Lay out the tortillas and evenly distribute the eggs, sausage, bell peppers, onions, and cheese.
  5. 5. Roll up each tortilla tightly and wrap in foil.
  6. 6. Place the wrapped burritos in freezer bags and freeze.
  7. 7. To reheat, remove foil and microwave on high for 2-3 minutes or until heated through.
