Ingredients

  • 2 large eggs separate yolks and whites
  • ¼ cup milk
  • ½ cup all-purpose flour sifted
  • ½ teaspoon baking powder
  • 2 tablespoon sugar
  • ¼ teaspoon vanilla extract
  • 1 tablespoon vegetable oil for cooking

Instructions 

  1. 1. In a bowl, whisk egg yolks, milk, and vanilla extract until combined.
  2. 2. Sift in flour and baking powder, mix until smooth.
  3. 3. In another bowl, beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form.
  4. 4. Gently fold egg whites into the yolk mixture, being careful not to deflate the batter.
  5. 5. Heat a non-stick pan over low heat and lightly grease with vegetable oil.
  6. 6. Spoon batter into the pan, cover with a lid, and cook for about 4-5 minutes on each side until golden brown and cooked through.
  7. 7. Serve immediately with your favorite toppings.
