Feijoada Brazilian Black Bean Stew

- 1 lb Black beans dried
- 1 lb Pork shoulder cut into chunks
- 1 lb Smoked sausage sliced
- 1 cup Onion chopped
- 4 cloves Garlic minced
- 2 bay leaves Bay leaves
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 6 cups Water
1. Rinse and soak the black beans in water overnight.
2. In a large pot, cook the pork shoulder over medium heat until browned.
3. Add the smoked sausage, onion, and garlic. Cook until the onion is translucent.
4. Drain the beans and add them to the pot along with the bay leaves, salt, and pepper.
5. Pour in the water and bring to a boil. Reduce heat to low and simmer for about 2 hours, or until the beans are tender.
6. Adjust seasoning with more salt and pepper if needed. Serve hot with rice and orange slices.
