Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Onion, sliced
  • 2 cups Cooked Chicken, shredded
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 4 Large Flour Tortillas
  • 2 cups Shredded Cheese (Cheddar or Mexican blend)

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced bell peppers and onion. Cook until softened.
  3. Add shredded chicken, chili powder, cumin, and garlic powder. Stir well and cook for another 5 minutes.
  4. Remove mixture from skillet and set aside.
  5. Place a tortilla in the skillet, sprinkle with cheese, add the chicken mixture, and top with more cheese. Place another tortilla on top.
  6. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.
