Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 head escarole, chopped
  • 2 cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • to taste salt and pepper
  • ¼ cup grated Parmesan cheese (optional)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add chopped escarole and cook until wilted, about 5 minutes.
  4. Add cannellini beans and vegetable broth. Bring to a simmer.
  5. Season with salt and pepper to taste. Simmer for 10 minutes.
  6. Serve hot, topped with grated Parmesan cheese if desired.
