Main Ingredients
- 4 ears corn shucked
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese crumbled
- 1 tablespoon lime juice freshly squeezed
- ½ teaspoon chili powder
- ¼ cup cilantro chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
1. Preheat grill or grill pan to medium-high heat.
2. Grill the corn until charred, about 10 minutes, turning occasionally.
3. Cut the corn kernels off the cob and place them in a mixing bowl.
4. Add mayonnaise, sour cream, cotija cheese, lime juice, chili powder, cilantro, salt, and pepper to the bowl. Mix well.
5. Serve immediately or chill in the refrigerator until ready to serve.
