Ingredients 

Main Ingredients

  • 2 large Eggplants sliced into ¼ inch rounds
  • 2 cups Breadcrumbs Italian seasoned
  • 1 cup Parmesan Cheese grated
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese shredded
  • 2 large Eggs beaten
  • 1 cup Flour
  • 1 cup Olive Oil for frying

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Dip eggplant slices in flour, then beaten eggs, and finally coat with breadcrumbs.
  3. Heat olive oil in a frying pan and fry eggplant slices until golden brown. Drain on paper towels.
  4. In a baking dish, layer fried eggplant slices, marinara sauce, mozzarella cheese, and Parmesan cheese. Repeat layers.
  5. Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
