  • 12 pieces Egg Whites
  • 1 cup Chopped Vegetables (bell peppers, spinach, onions)
  • ½ cup Shredded Cheese
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin tin with non-stick cooking spray.
  3. In a mixing bowl, whisk together the egg whites, salt, and pepper.
  4. Divide the chopped vegetables evenly among the muffin cups.
  5. Pour the egg white mixture over the vegetables, filling each cup about ¾ full.
  6. Sprinkle shredded cheese on top of each cup.
  7. Bake in the preheated oven for 20 minutes, or until the egg whites are set.
  8. Let cool for a few minutes before removing from the muffin tin. Serve warm.
