  • 6 large Eggs hard-boiled
  • ¼ cup Mayonnaise
  • 1 tablespoon Mustard
  • 1 tablespoon Chives chopped
  • to taste Salt
  • to taste Pepper
  • 8 slices Bread

Instructions 

  1. 1. Peel and chop the hard-boiled eggs.
  2. 2. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, chives, salt, and pepper.
  3. 3. Mix until well combined.
  4. 4. Spread the egg salad mixture onto 4 slices of bread.
  5. 5. Top with the remaining 4 slices of bread.
  6. 6. Cut sandwiches in half and serve.
