Ingredients 

Main Ingredients

  • 3 cups Cooked rice preferably day-old
  • 3 Eggs beaten
  • 2 tablespoon Soy sauce
  • 1 cup Frozen peas and carrots thawed
  • 2 tablespoon Vegetable oil
  • 3 Green onions chopped
  • 1 clove Garlic minced

Instructions 

  1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
  2. In the same wok, add the remaining oil. Add garlic and cook until fragrant.
  3. Add the peas and carrots, and cook for a few minutes until tender.
  4. Add the cooked rice and soy sauce. Stir well to combine.
  5. Return the scrambled eggs to the wok and mix everything together. Cook for another 2-3 minutes.
  6. Garnish with chopped green onions and serve hot.
