Ingredients 

Main Ingredients

  • 4 cups chicken broth
  • 2 large eggs beaten
  • 1 tablespoon cornstarch mixed with 2 tablespoon water
  • 1 teaspoon salt to taste
  • 1 teaspoon white pepper to taste
  • 2 slices ginger optional
  • 2 stalks green onions chopped, for garnish

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add the ginger slices if using, and let it simmer for a few minutes.
  3. 3. Stir in the cornstarch mixture and cook until the broth thickens slightly.
  4. 4. Slowly pour in the beaten eggs while stirring the soup in a circular motion.
  5. 5. Season with salt and white pepper to taste.
  6. 6. Remove the ginger slices if used, and ladle the soup into bowls.
  7. 7. Garnish with chopped green onions and serve hot.
