Ingredients

  • 6 large Eggs hard-boiled
  • ¼ cup Mayonnaise
  • 1 tablespoon Curry Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 8 slices Bread whole grain or white
  • 1 tablespoon Butter softened, for spreading

Instructions 

  1. 1. Peel and chop the hard-boiled eggs.
  2. 2. In a mixing bowl, combine chopped eggs, mayonnaise, curry powder, salt, and black pepper. Mix well.
  3. 3. Spread butter on one side of each bread slice.
  4. 4. Spread the egg mixture evenly on 4 slices of bread, then top with the remaining slices to make sandwiches.
  5. 5. Cut sandwiches in half and serve.
