Ingredients

  • 1 cup Cottage Cheese
  • 3 Eggs
  • ½ cup All-purpose Flour
  • ¼ cup Milk
  • 1 tablespoon Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Salt
  • 2 tablespoon Butter for cooking

Instructions 

  1. In a mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract until well combined.
  2. In another bowl, mix the flour, sugar, baking powder, and salt.
  3. Combine the wet and dry ingredients, stirring until just mixed. Do not overmix.
  4. Heat a non-stick pan over medium heat and add a bit of butter.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
