Ingredients

  • 1 package cornbread mix
  • 1 can pinto beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chopped tomatoes
  • 1 cup chopped green bell pepper
  • 1 cup chopped red onion
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 packet ranch dressing mix

Instructions 

  1. Prepare cornbread according to package instructions. Let cool and crumble.
  2. In a large bowl, combine crumbled cornbread, pinto beans, corn, tomatoes, bell pepper, red onion, and cheddar cheese.
  3. In a separate bowl, mix mayonnaise, sour cream, and ranch dressing mix.
  4. Pour dressing over the cornbread mixture and toss to coat.
  5. Chill in the refrigerator for at least 1 hour before serving.
