- 4 cups Corn kernels fresh or frozen
- 1 cup Mayonnaise
- 1 cup Cotija cheese crumbled
- 1 teaspoon Chili powder
- 1 tablespoon Lime juice fresh
- to taste Salt
- to taste Pepper
1. Boil the corn kernels in a pot of water for about 5-7 minutes until tender. Drain and set aside.
2. In a large bowl, mix the corn kernels with mayonnaise, Cotija cheese, chili powder, lime juice, salt, and pepper.
3. Spoon the mixture into cups and serve warm.
