Cold Greek Tortellini Salad

Main Ingredients
- 1 package cheese tortellini about 9 ounces
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion thinly sliced
- ½ cup kalamata olives pitted and halved
- ½ cup feta cheese crumbled
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cook the tortellini according to the package instructions. Drain and rinse with cold water to cool.
In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
Pour the dressing over the salad and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
