Chinese Chicken Fried Rice Recipe

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Cooked chicken diced
- 2 tablespoon Soy sauce
- 1 cup Frozen peas and carrots
- 2 Eggs beaten
- 3 tablespoon Vegetable oil
- 2 cloves Garlic minced
- 1 Onion small, chopped
- 2 stalks Green onions chopped
Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
In the same wok, add the remaining oil. Add garlic and onion, and stir-fry until fragrant.
Add the diced chicken, peas, and carrots. Stir-fry for about 3-4 minutes.
Add the cooked rice to the wok. Pour soy sauce over the rice and mix well.
Return the scrambled eggs to the wok and stir to combine. Add green onions and give it a final stir.
Serve hot.
