Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Chicken breast, cooked and shredded
  • 4 cups Chicken broth
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 cup Corn kernels
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Tortilla chips, crushed
  • 1 cup Shredded cheese
  • 1 cup Cilantro, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic, cook until softened.
  3. 3. Stir in shredded chicken, chicken broth, diced tomatoes, black beans, and corn.
  4. 4. Add cumin, chili powder, salt, and black pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 20 minutes.
  6. 6. Serve hot, topped with crushed tortilla chips, shredded cheese, and chopped cilantro.
