Main Ingredients
- 1 whole Chicken cut into pieces
- 2 cups Carrots sliced
- 1 cup Celery sliced
- 1 large Onion chopped
- 3 cloves Garlic minced
- 8 cups Chicken Broth
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Parsley
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic. Cook until softened.
2. Add the chicken pieces to the pot and cook until browned on all sides.
3. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer.
4. Add the carrots, celery, salt, pepper, thyme, and parsley. Simmer for about 30 minutes or until the chicken is cooked through and the vegetables are tender.
5. Remove the chicken pieces, shred the meat, and return it to the pot. Discard the bones.
6. Serve hot and enjoy!
