Chicken Salad
- 2 cups Cooked Chicken, chopped
- ½ cup Mayonnaise
- ¼ cup Celery, chopped
- ¼ cup Red Onion, chopped
- 1 tablespoon Dijon Mustard
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Sandwich
- 8 slices Bread
- 4 leaves Lettuce
- 1. In a mixing bowl, combine the chopped chicken, mayonnaise, celery, red onion, Dijon mustard, salt, and black pepper. Mix well. 
- 2. Lay out the bread slices. Place a leaf of lettuce on four of the slices. 
- 3. Spoon the chicken salad mixture onto the lettuce leaves. Top with the remaining bread slices. 
- 4. Cut the sandwiches in half and serve.
