Chicken Salad
- 2 cups Cooked Chicken, chopped
- ½ cup Mayonnaise
- ¼ cup Celery, chopped
- ¼ cup Red Onion, chopped
- 1 tablespoon Dijon Mustard
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Sandwich
- 8 slices Bread
- 4 leaves Lettuce
1. In a mixing bowl, combine the chopped chicken, mayonnaise, celery, red onion, Dijon mustard, salt, and black pepper. Mix well.
2. Lay out the bread slices. Place a leaf of lettuce on four of the slices.
3. Spoon the chicken salad mixture onto the lettuce leaves. Top with the remaining bread slices.
4. Cut the sandwiches in half and serve.
