Chicken Posole

Main Ingredients
- 2 lbs Chicken thighs boneless, skinless
- 1 large Onion chopped
- 4 cloves Garlic minced
- 1 tablespoon Oregano
- 1 tablespoon Cumin
- 6 cups Chicken broth
- 2 cans Hominy drained and rinsed
- 2 tablespoon Olive oil
- to taste Salt and pepper
- 1 Lime cut into wedges for serving
- 1 cup Cilantro chopped, for garnish
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, oregano, and cumin. Cook for another 2 minutes.
Add chicken thighs to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken from the pot, shred it using two forks, and return it to the pot.
Add hominy to the pot and simmer for another 15 minutes. Season with salt and pepper to taste.
Serve hot, garnished with chopped cilantro and lime wedges on the side.
