Ingredients 

Main Ingredients

  • 1 lb Chicken breast diced
  • 1 cup Rice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 2 carrots Carrots sliced
  • 2 stalks Celery sliced
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Add the sliced carrots and celery. Cook for another 5 minutes.
  4. 4. Pour in the chicken broth and bring to a boil.
  5. 5. Add the rice and reduce the heat to a simmer. Cook until the rice is tender, about 20 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
