Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded carrots
  • 2 cups spinach
  • 1 lb cooked chicken, shredded
  • 1 lb gnocchi
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Add heavy cream, shredded carrots, and spinach. Cook until spinach is wilted.
  6. Add shredded chicken and gnocchi. Cook until gnocchi is tender.
  7. Season with salt and pepper to taste. Serve hot.
