Ingredients 

Main Ingredients

  • 1 lb Fish fillets cut into chunks
  • 1 cup Coconut milk
  • 2 cups Fish stock
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 2 Tomatoes chopped
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime juiced

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until softened.
  2. 2. Add the chopped tomatoes, thyme, salt, and black pepper. Cook for another 5 minutes.
  3. 3. Pour in the fish stock and coconut milk. Bring to a simmer.
  4. 4. Add the fish chunks and lime juice. Simmer for about 10-15 minutes, until the fish is cooked through.
  5. 5. Serve hot, garnished with fresh herbs if desired.
