- ½ cup unpopped popcorn kernels
- 1 cup brown sugar
- ¼ cup light corn syrup
- ½ cup unsalted butter
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ teaspoon vanilla extract
Preheat oven to 250°F (120°C).
Pop the popcorn kernels and place them in a large bowl.
In a saucepan, combine brown sugar, corn syrup, butter, and salt. Bring to a boil, stirring constantly.
Remove from heat and stir in baking soda and vanilla extract.
Pour caramel mixture over popcorn and stir to coat evenly.
Spread popcorn on a baking sheet and bake for 30 minutes, stirring every 10 minutes.
Let cool before serving.
