Ingredients

  • 2 cups yellow split peas rinsed and drained
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots chopped
  • 2 stalks celery chopped
  • 1 pound ham hock
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, combine the yellow split peas, onion, garlic, carrots, celery, ham hock, chicken broth, thyme, and bay leaf.
  2. 2. Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the peas are tender and the soup has thickened.
  3. 3. Remove the ham hock, chop the meat, and return it to the pot. Discard the bone.
  4. 4. Season with salt and pepper to taste. Serve hot.
