  • 1 whole Zucchini sliced
  • 1 whole Red Bell Pepper sliced
  • 1 whole Yellow Bell Pepper sliced
  • 1 whole Red Onion sliced
  • 4 slices Provolone Cheese
  • 4 whole Ciabatta Rolls split
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Brush the zucchini, bell peppers, and red onion with olive oil. Season with salt and black pepper.
  3. 3. Grill the vegetables for about 4-5 minutes on each side until they are tender and have grill marks.
  4. 4. Toast the ciabatta rolls on the grill for about 1-2 minutes until they are lightly browned.
  5. 5. Assemble the sandwiches by layering the grilled vegetables and provolone cheese on the ciabatta rolls.
