Ingredients 

Main Ingredients

  • 2 lbs Beef shank cut into chunks
  • 1 Onion quartered
  • 2 cloves Garlic minced
  • 4 cups Beef broth
  • 2 Carrots cut into chunks
  • 2 Zucchini cut into chunks
  • 2 Corn on the cob cut into thirds
  • 1 Cabbage cut into wedges
  • to taste Salt
  • to taste Pepper
  • 1 Lime cut into wedges, for serving

Instructions 

  1. 1. In a large pot, add the beef shank, onion, garlic, and beef broth. Bring to a boil, then reduce heat and simmer for about 1 hour.
  2. 2. Add the carrots, zucchini, corn, and cabbage. Continue to simmer for another hour or until the meat and vegetables are tender.
  3. 3. Season with salt and pepper to taste. Serve hot with lime wedges on the side.
